Tiny Snack Sized Episode with ME!!

This week it’s a nice little snack size episode chatting about all things food tv and recipes I have made recently and think are worth making for sure. It’s been a hell of a month and the weather and my emotions were screaming feed me cozy food so the recipes below are kind of cozy, kind of comforting but VERY delish!

  • Butter Cauliflower and Chickpeas with Mint Chutney - my god is this good and would be great with chicken too!

  • Chicken Tikka Masala - make the full mise of the masala paste and freeze half of it.

  • The Quickest Udon and Pork Noodles - if you are a cabbage lover add in the entire small/medium head because it’s SO DELISH!

  • This Saucy Chickpea Dish - USE GOOD DRIED BEANS!!!! Don’t skimp on this. And I love some crunchy bread and/or a short pasta. For the beans, I love Simpli or Rancho Gordo

  • This chopped Asian Chicken Salad - it will be in the monthly rotation for sure

  • This Chicken and Dumplings - I used a rotisserie chicken to make it even easier

Talking Travel with Nathan from Foodie Flashpacker Part 1 and 2

Season 4, Episode 6 and 7: I took notes so you didn’t have to…. So grab your beverage of choice and let's get into it!

Have you ever wanted to quit your job, pack up your stuff and just leave. I mean you literally pick a spot in the world and go on what you thought would be an extra long vacation? But wait… you then decide not to go home and then just keep going! Yep that’s right just keep traveling around the world and never look back? Think…like a 10 year+ Eat, Pray, Love vibe but so much more! Well my friends have I got a guest for you. Nathan is from Foodie Flashpacker and he is here to discuss what’s it like to turn a 6 week vacation into a 10 year+ adventure and still going strong!

God can you image, just leaving it all. Just packing what you need, I would have a hell of a time doing that…you should see what I bring on shoot with me just for a single day being on set somewhere local let alone traveling the world. I mean I ALWAYS overpack. I have made overpacking an art form. I mean what if George Clooney calls me and says, “Hey Beth, could you swing by my house on Lake Como for the weekend. I am having a dinner party and I’d love for you to be there.” Gotta have an outfit for that. Or what if Queen Bey says, “Hey Beth, I am going to be yachting in the South of France this weekend. Wanna swing by?” Gotta have an outfit for that! A gal has always got to be prepared for it all!

When I was 19 I moved to Ireland for a summer and I took the world’s BIGGEST suitcase. I mean you could’ve fit two human adults in it and packed everything. I mean everything. My entire cd collection, it was the 90’s, my entire summer closet and a few cartons of cigarettes because I was frugal but needed to have my Parliament lights. When I got there I realized fairly quick it’s not the same kind of “summer” that I was use to. It was rainy, cold and damp. Also lugging a MASSIVE suitcase around Dublin and Galway that weighed the same as a small baby elephant not a great idea either. But I was young and VERY clueless on how to travel and in all honesty I am still always figuring out how to travel and I think I will always be an overpacked! At least I am ready for anything!

Alright so you are ready to hit the road but not sure where to go well maybe think about checking out one or all of the places below.

  • In Mexico - Skip Cancun, Tulum and Playa and check out Merida, Oaxaca or Mexico City. Merida is the capital city of the Yucatan and is ranked the safest city in all of Mexico and one of the safest cities in North America. If you make your way to Oaxaca, please check out this Mexcal and Mole Pairing, Nathan said it was AMAZING!

  • In Buenos Aires, Argentina - Omg there’s so many things to do! We barely scratched the surface in our conversation. First off you need to go! Secondly check out this site, it’s filled with a lot of fun spots to check out for your first time there and of course go to head to Nathan’s site for some awesome food picks!

  • In Albania and Croatia - In Albania if you want live it up in Albania head on over to the Blloku. It’s like the Beverly Hills of the capital city. In Croatia, oh there is so much to do. It’s very similar to the east coast of Italy. It’s just across the Adriatic from Italy so it’s go that vibe. It’s like Greece and Italy had a baby and that baby is Croatia. It’s still some what affordable, lots of cute little islands to island hop on. A beautiful inland area with farms, wineries and incredible delicious food. It’s for sure going to be one of our next big trips we are going to take without a doubt!

  • Spain and the Canary Islands - If you are heading to Madrid and love a good tour please contact Joy of Madrid. She is a wonderful resource and will help making all of your Madrid vacation dreams come true! If you are part of the LGBTQIA+ community or a squirrel friend and love supporting the community the Chueca neighborhood in Madrid could be for you.

  • Moldova - If you find yourself randomly in Moldova, which I am sure is a lovely country. Nathan suggests checking out the Circova Winery and try the sparkling wine for sure.
